A very SWEET Christmas

Anno nuovo buoni propositi.

New year, and as usual new year resolutions too. Some of them are a bit more lighthearted and more or less doable with a bit of goodwill, others are more important, deep, intimate.. the kind of dreams you can only whisper about and you just keep them safe inside your heart. My plan is to fully and deeply enjoy everything I have been gifted with, and I know it may sound like obvious, but many times I realise you just waste your time getting upset with silly things and it's often easy to point that out when other people do it, but more difficult to realise when you do that yourself.
Among the little resolutions (well.. actually not so little given the time involved) there definitely is the intention to come back to blog. I know I've probably said that at least 10 times during last year but maybe this is the real deal (well maybe I'll try to make posts much shorter than this one). Among the new year resolutions I am also planning, after the crazy Christmassy cakes and cookies galore, to go back to some kind of healthy eating, as a couple of years ago it helped me loose a lot of weight and I ended up feeling better and much more energetic. But that (as usual ^_^) will be from tomorrow of course, as of today (that is the first day back to normality, as we don't celebrate Epiphany here in the UK so yesterday was the last day of "holidays") we still had to finish the last slice of pandoro at lunch and most of all I want to still dream a little bit of icing sugar and cinnamon dreams while I tell you about my latest  baking adventures!

Everything started at the beginning of December with the usual Christmas party at my husband's company. It's a nice occasion to meet friends and colleagues and, because there is usually a little stall selling homemade baked goods for charity, I always love to spend some time baking a little something for this event. It was only the first of three big bake offs during all of December, either for other occasions or for little gifts. The cookies are always the same year after year, they are tried and tested and it has became, by now, a family tradition of this time of year. I'd like to take the occasion, once and for all, to leave you all the recipe and links, as I am often asked about them and they are all spread among different old posts, so here it is!

So here is everything I made during this Christmas season together with everything I had also made in the past:

Gingerbread cookies: my recipe can be found here
For the icing I mix an egg white with some icing sugar (if you can find vanilla flavoured one, even better, it's quite popular in Italy, not o much in the UK). I just keep on adding the icing sugar and mixing until I reach the right consistency (that is the most complicated step.. and the one I sometimes fail too). To decorate the cookies I use a piping bag with a very tiny nozzle.

Shortbread vanilla South Tyrol cookies with icing sugar and/or filled with jam: you can find the original recipe here (I translated them in english with my little modifications too and you can download the recipe from here). I decorate them either with just icing sugar (again, ideally vanilla flavoured) or I fill them with jam as per recipe.

Shortbread vanilla cookies decorated with chocolate: same recipe as above. I melt approx 2/3 of dark 70% chocolate  and 1/3 milk chocolate using the "a bain marie" technique (see here if you are not familiar with it) and then, for the heart shaped ones I dip a portion of the cookie inside the melted chocolate, I turn it around a bit to let it drain most of the liquid and then I lay them on some baking paper (trust me, after a few hours, the cookie will detach from the paper and will be perfectly lined with a thin layer of chocolate on both sides) and for the stars and round ones I use again a piping bag with a tiny nozzle and randomly decorate them from side to side with thin stripes.

Horseshoe shaped Austrian almond cookies: I didn't make them recently but I made them in the past (see here) and I love them. The original recipe (italian only sorry) can be found here.

Rudolph cookies: again, I didn't manage to make this Christmas but I have made them in the past (you can have a peek at them here) and they are such a fun and cute idea! To make them I use my gingerbread cookies recipe and I decorate them with some red smarties for the nose (I attach them with a tiny bit of icing sugar) and some melted chocolate for the eyes and antlers (as explained above)

***

Every year I enjoy presenting them with some kind of cute packaging, but since Adele is here time is very limited so the packaging has become very minimal, but nonetheless cute, I think. I wanted to take a nice photo of all of them together so I put them all nicely displayed on my beloved dresser and for a moment I even imagined felt like being a character in one of Jenny Colgan lovely novels and owning my own little sweet bakery... :)

***

My second baking adventure was decorating a gingerbread house for the first time in my life. Well, it was a partial adventure as the house was a ready made one that a friend (who perfectly knows my tastes and passions) gave to me for my birthday a few weeks ago!

***

And so a few days before Christmas I finally devoted an afternoon to it. I had been talking to a friend about the fact that I can't wait for when Adele and me will make cookies and these kind of things together, when she will be a bit older, and my friend was telling me that her 10 yo daughter loved these kind of things, so we decided to join everyone and spend an afternoon together playing in the kitchen! It should have been just a big cookies baking session but I surprised them with another gingerbread house to decorate (identical to the one that was gifted to me) and we ended up making both the cookies and decorating our little houses too!

***

So on a cold and dark December afternoon, with all the twinkle lights warming up my little cosy kitchen, and with the icing sugar ending up in our hair, shoes, sticky hands and clothes, and in the middle of a lot of laughter, our little fairy tale houses came to life!
(everything seems so poetic, but the truth is we all agreed to not wanting to see or touch or even hear about icing sugar for the next 6 months at least!!!)

***

Wow, we felt  SO PROUD!!!
Both me and my little colleague absolutely adore our little abodes! Her cute and cheerful colourful one with plenty of candies and smarties ... (I wanted to take a decent photo of them together, but of course she wanted to take hers home) and mine, that, initially was supposed to be all white and nordic but then, seeing her colourful one, I got carried away and I decided for a compromise: yes to smarties but ONLY in my favourite shades :)

***

I enjoyed all of this so much that I am planning to maaaaaaaaaaaybe try the impossible next year......
make one from scracth O_O ?!

***

And last but not least the one thing I am most proud of among all of my baking and cooking Christmas adventures. My chocolate salami dressed up as a Christmas pudding!!!
Everything began when the daughter of the friends we were spending our Christmas lunch with asked me to take a chocolate salami for the lunch together with the pandoro I was already taking. I said "Yes of course I can, I know you love it, but I don't think it's a very Christmassy cake actually... unless I make it a little cuter, a little more festive.. I don't know.. mmmmmmh I could maybe add some berries and some icing... or.. mmmmh....." and there the idea stroke!
To transorm a boring and (let's say it) quite ugly chocolate salami into a typical and very cute traditional English Christmas pudding!

***

I have to be honest, none of the people (all Italians) at the lunch were fans of this typical English cake. Personally I am quite difficult with cake ingredients as among the rest, I quite loathe candied fruits and raisins (therefor I am also not a fan of the very Italian panettone as well, I am #teampandoro always and forever!) and I am not very keen in spices and liquor, so I basically don't like almost any of the Christmas pudding ingredients :( But at the same time I absolutely adore its cute, iconic, festive and traditional look.

***

And so this fake pudding came to life.. and how fun we had at the time of eating it! Nobody wanted to try it first because they didn't trust me and they were absolutely convinced it was the real thing as it looked so realistic!
But above here you can see it cut and that is the proof it was indeed a chocolate salami. It was made using the recipe from my grandmother that all my friend absolutely adore every time I make. The only differences were the fact I used a Christmas pudding mould to give the right shape and I decorated it with some ready made fondant and a couple of Christmassy berries and leaves.
